This sambhar curry , a south Indian curry, is a simple combination of onions, vegetables, beans and lentils in a spicy sauce. I had planned to use it on the camping trip, but a fisherman gave us some of his fresh-caught trout. So, I made this for lunch today, just an experiment. Once the vegetables are eaten, the crust from the sourdough bread absorbs some of the curry flavor, and is quite satisfying.
Sambhars are varied, like gravies, and very easy to prepare. Just make the spice blend, and add. This one has red gram, tomato and onion, tamarind concentrate, grated coconut, coriander, chilli powder, cumin, fenugreek, black mustard, cinnamon, and tumeric.
