Hawaiian Pancakes For Sunday Morning


Our son Rahmat spent the weekend here, and he asked for pancakes. I prepared Hawaiian pancakes, poached eggs and bacon. The pancakes are buttermilk, with a cup of coconut powder added. To make coconut syrup, just add a little corn starch to canned pineapple juice and sugar, bring to a boil, adding the pineapple tidbits at the end to cool the syrup.
